Ingredients 2 Zucchinis grated 3 carrots grated 8 - 10 whole eggs (Can use just egg whites if you wish from the carton) Mushrooms sliced 1/2 cup shredded cheese- Liddells lactose free 1/2 onion diced 2 Bacon- optional 1 tsp Salt 1 tsp pepper 1 tsp curry powder 1 tsp Paprika 1/ Pre heat the over to 180 degrees. In a pan lightly cover the bottom with olive oil. Lightly saute the onion. Add the bacon and allow this to cook 2/ Add mushroom, carrot, zucchini and any other vegetables of your choice. e;g capsicum 3/ While this is cooking in a bowl beat all the eggs with an electric beater and add the herbs 4/ In a baking dish, lightly oil it. Add the cooked ingredience from the pan. Pour the beated egg mixture and cheese over the top and stir 5/ Place in the oven for aprox 20 mins or until it's cooked through.
